Autumn is such a wonderful time of the year.
I love the array of colors that press up against the blue sky, the dried stalks of corn in the fields and the farm stands filled with pumpkins.
It is pumpkin time once again! Yes, I love to cook with pumpkin in so many ways. Of course the pie, then the pumpkin soup and then there is this...the hot pumpkin drink.
Pumpkin & White Hot Chocolate
1.5 cups whole milk or coconut milk
1/2 cup canned pumpkin puree
1/2 tsp. cinnamon
1/2 tsp. vanilla
2 ounces white chocolate (chopped)
** For extra benefits I add some powered tumeric!
In a small sauce pan over medium heat, combine milk, pumpkin, vanilla and cinnamon.
Cook and stir constantly until just simmering. Remove from heat and add chocolate.
Stir to blend. Sprinkle more chopped chocolate on top before serving.
Then top each cup with a topping of whipped cream.
You can sprinkle more cinnamon on top. Hmmmm!
